For the most part, the color doesn’t matter. As long as the background is evenly lit and no one is wearing colors similar to the background, either will work perfectly fine. Green is usually used now since most people are going digital, and the digital sensor is more sensitive to green than the other colors (green makes up 50% of the digital sensor on single CCD cameras, not the case in 3 CCD cameras though)
